"Vegetarian meatballs" Yeah ok. It may be a description I have made up myself, but it is not entirely wrong. Falafel reminds me a lot of meatballs. I am very fond of dishes with chickpeas in general. But there is no doubt that this is among my top two ways to make them. Humus being the second favourite.

Video Recipe - A lot of us, by now, have a pasta machine, but if you are really hardcore, you make it by hand ;-) A rolling pin and a knife is all you need. The funny thing is that it does actually not take any longer to do it by hand ... but it's quite a bit harder on the arms. Ok. A machine is easier, but it's fun to do it all by hand.

The white bread is a classic. No doubt about that. Although I have baked "No Knead/The world's best bread" for years, the French bread somehow still leaves the kitchen a lot faster when I bake that :-S So there must be something to it that other loaves simply does not have. I often use this simple and quick recipe that never fails, and does not require anything more than a conventional oven to make. It provides a finished bread in 2 hours.

Video Recipe - Rösti are made with cooked potatoes, so I use it often as "leftovers" instead of the typical fried potatoes, hash and so on. But it is an accessory that everyone likes, and it has the advantage that you can add bacon, onion, cheese, apple or fresh herb. Which promises it over the other simple potato dishes.

Cottage potatoes are raw potatoes that are cooked in a frying pan. It's a good way to fry 2-4 servings of potatoes. However, it is not a good way to cook large quantities of potatoes. If they lie in layers on the pan, then the upper potatoes are cooked, and the bottom ones are in high risk of burning. There may be raw potatoes, hidden among the other ones and that can really make pan fried potatoes into a sad affair. Otherwise, you must use a really long frying time on large portions to be sure that all the potatoes are tender. At the risk of some getting burned. So here are my tips for making them.

When making soy milk there is a residue called "okara". If you roast it golden, it tastes like roasted almonds. It is therefore particularly suitable for a homemade "granola". And you, and the kids, will love it. It will not be a we-have-duty-to-eat-leftovers kind of thing, but a really good granola.

Video Recipe - Everybody loves french fries, and I'm certainly no exception. This is probably one of the recipes I have spent the most time on perfecting through my cooking career. I have tried out in double- and triple-fried. Blanching at 84°C (183°F) for one hour followed by deep-frying at a relatively low temperature, cooling and refrying at a high temperature etc., Etc. In short, I have tried all the methods I've read about. Along the way I learned a lot about what is important for good fries and what is not. The four necessary main points I have written into my "kvalifood law of fries" which is in the notes of this recipe. but most importantly, I have developed a french fries recipe that suits my taste 100% and works every time. You can often buy hummus in supermarkets and specialty stores. Most of those I do not care much about. So I have bribed and begged my middle eastern friends for their recipes. From those I have made a humus that suits my taste. The recipe looks simple, but it took a LOT of experimentation to find the right balance.

Video Recipe - Boiled potatoes from the day before are fantastic to use in many dishes. Potato Blinis is one of those recipes that I use them for relatively often. Small thick pancakes that are very similar to the american breakfast pancakes. They are equally useful in the sweet and the savory kitchen.

Video Recipe - One of the best snacks you can, well snack on, is also one of the easiest to make yourself. If you make them yourself, they are also much better than the ones you buy pre-popped. Warm and fresh. Maybe even made with clarified butter instead of oil. I get so sad when I see someone buying popcorn in bags from the supermarket when the homemade ones are twice as good. Maybe they are even 3.1415 times better !? So make them yourself ... right? Please!

Isn't it enough to just bake potatoes once? well sure, if they just have to be tender, but if you also want them to taste great, rebaked potatoes just have a bit more oomph. You simply take a baked potato and bake it gratinated/au gratin. Which you can do close to when they have to be done. They can also be made a day in advance without loosing any flavor, so they are excellent for guests.

It is an unusual but underrated side dish here in Denmark. It is reminiscent of boiled rice, but is made from semolina, which in itself does not taste of much. This makes it suitable for adding all sorts of deliciousness. Personally I prefer it like this. It is served cold and is therefore very suitable for making in advance, and it can be served straight from the fridge.

I looove potato pancakes, but for many years I have found it difficult to be completely happy with the ones I made. Either they were burned on the outside, or they were raw on the inside. But I finally found a trick that was necessary for complete success. every time.
