Shortbread is a funny cookie. It is literally the most simple cake recipe there is! Only 3 ingredients. I do not think you can make a recipe more simple than that and then get something edible out of it, that can be called a cake. For me, this is the "Ground Zero" of the cakes. Where it all starts. All other cakes are variations of it. Well ok. That is perhaps not the entirely right, but it only takes 5 minutes to bake, and can be eaten with jam or other sweet spreads.

I had to make cake for a school event for my oldest daughter Caroline. And could not bear to make that many cupcakes. I'm not always too thrilled about the usual "school cakes" we have here in Denmark. So I decided to make a cross between a triple chocolate muffins and a plain pound cake. As fate would have it, I only had drained Greek yogurt instead of the plain yogurt, That I used to have in the fridge. So I was a little skeptical. But it turned out to be one of my very best efforts. A spongy chocolate flavor that is not too sweet.

A recipe I made by accident. I tried to make a coconut sponge cake. It was a bit bland. So I thought about how it could be pepped up. "Pineapple tastes well with coconut" i thought. I have gotten into the bad habit of making a portion of these, that I keep in a big glass jar. That way there is always something to put my cheese or Rillette onto. They taste amazing. They are made of grains and seeds, so they are also good if you know someone who can not tolerate gluten, milk, eggs, etc. Or for people who do not eat carbohydrates. In that case you should probably leave out the fig-mustard I'm using in the picture though :-)
