Video Recipe - For me, the hardest thing to do for christmas eve was always the duck sauce. If you make it like a restaurant sauce, it will not have the correct consistency and taste the we danes know from christmas eve. So the trick is to find a balance both in the time it takes, and the ingredients you have to use. Video Recipe - The classic home copy of the baker truffles and rum balls. I do not like the almond extract that is traditionally used. So I use a little marzipan instead. And yes. That is grandmother Marie from the family who gave her name to the recipe. She most likely has the recipe from some womens magazine. But I do not want to dig too much into that. It is much more pleasant to live with the illusion that it has just magically been passed along by the generations.

Pepper Nuts is a classic recipe with roots in the Middle Ages. With typical medieval spices. When a court has survived as long as it is not a coincidence. Duck stock is not often used for anything but duck sauce. Duck soup is quite unusual :-) But duck sauce is a classic, so here is a stock that is very suitable for that. In denmark it is mostly eaten around christmas eve, but it really should be eaten all year round.

A danish classic. Very well suited for the smoked herring (kippers), shrimp or whatever you have in mind. We usually get it at Christmas, but it is not necessary to limit it to that season. It is suitable as a condiment for meats, in sandwiches and open sandwiches (smørrebrød) for all seasons.
