Octopus with potatoes and spinach - Lisbon inspirational tour - Day 5 - kvalilog_11

The last day in Lisbon I got grilled octopus. It was a nice dish, so I recreated it here. Octopus is not something I've had so often, so it's fun to try when you come to a country where they eat a lot of it. And they did have some really good recipes.

Ingredients

  • 1 large octopus
  • 1 kg small potatoes, cooked
  • 1 bunch of parsley
  • 2-3 cloves of garlic
  • 1 large portion of spinach
  • 1 lemon, juice off
  • oil for frying

Directions

Clean and cook the squid as I show in this video .

Fry the potatoes at high heat, to brown them well.

Add the cooked octopus and fry that too. It must get some color.

Chop the garlic. Not too finely. Add it and fry it gently. Add a little oil so they brown more uniformly.

Take it all up and set aside.

Fry the spinach with the parsley and lemon juice until it has vilted and become soft and dark. The stems should still be a little crisp.

Mix it all, plate and serve.
