French Onion Soup

You have probably also had that experience. When you think that you have bought a great cookbook, and you eagerly page through it. Only to find out that it contains only one single recipe you like, but which turns out to actually be a *really* great recipe. The cookbook with the recipe for onion soup is the perfect example of this for me :-) So now that I have written the recipe here on the site, I can finally get rid of that cookbook.

Ingredients

  • 12 medium onions
  • 50 g butter
  • 1½ liters/quarts of broth
  • salt
  • pepper

topping

  • cheese to taste, I recommend a gruyere.

Directions

Peel the onions and cut them into thin slices.

Melt the butter in a pan.

Add the onions and slowly let them roast until they are golden.

When the onions are transparent, soft and sweet tasting, you add the stock.

Add salt and pepper to tast.

Let it simmer for 20 minutes.

The soup is now ready to serve.

Notes

In France it is normal to roast some bread and put it into the soup along with some cheese.
