Home Fries - Brased Potatoes - Bratkartoffeln

Video Recipe - I have been eating home fries since I was a kid. We had it the traditional "Danish style" with just potatoes, fat for frying, salt and pepper. For the last few years though, I have acquired a taste for the German version "Bratkartoffeln" with onion and bacon.

Pan Fried Potatoes - Cottage Potatoes
Cottage potatoes are raw potatoes that are cooked in a frying pan. It's a good way to fry 2-4 servings of potatoes. However, it is not a good way to cook large quantities of potatoes. If they lie in layers on the pan, then the upper potatoes are cooked, and the bottom ones are in high risk of burning. There may be raw potatoes, hidden among the other ones and that can really make pan fried potatoes into a sad affair. Otherwise, you must use a really long frying time on large portions to be sure that all the potatoes are tender. At the risk of some getting burned. So here are my tips for making them.
Homemade popcorn
Video Recipe - One of the best snacks you can, well snack on, is also one of the easiest to make yourself. If you make them yourself, they are also much better than the ones you buy pre-popped. Warm and fresh. Maybe even made with clarified butter instead of oil. I get so sad when I see someone buying popcorn in bags from the supermarket when the homemade ones are twice as good. Maybe they are even 3.1415 times better !? So make them yourself ... right? Please!
My Favorites Fries - Large Homemade French Fries
Video Recipe - Everybody loves french fries, and I'm certainly no exception. This is probably one of the recipes I have spent the most time on perfecting through my cooking career. I have tried out in double- and triple-fried. Blanching at 84°C (183°F) for one hour followed by deep-frying at a relatively low temperature, cooling and refrying at a high temperature etc., Etc. In short, I have tried all the methods I've read about. Along the way I learned a lot about what is important for good fries and what is not. The four necessary main points I have written into my "kvalifood law of fries" which is in the notes of this recipe. but most importantly, I have developed a french fries recipe that suits my taste 100% and works every time. Yielding the best and most crisp fries at all possible.
Blender Mayo - Homemade Mayonnaise
Video Recipe - A little egg, oil, acid, a bowl, and a whisk, is really all you need. But although I have whipped mayonnaise from scratch more times than I care to remember, it can still fail for me. When I do it in a blender on the other hand, it almost always succeeds. The taste and quality is the same too.

Potato Rosti - Swiss Potato Pancakes - Pommes Rösti
Video Recipe - Rösti are made with cooked potatoes, so I use it often as "leftovers" instead of the typical fried potatoes, hash and so on. But it is an accessory that everyone likes, and it has the advantage that you can add bacon, onion, cheese, apple or fresh herb. Which promises it over the other simple potato dishes.
Crème brûlée
Video Recipe - Crème Brûlée is *the* classic French dessert. It is an edible toy for adults. A crispy caramel top. A creamy blubbery filling. It is simple to make. Uses few ingredients, and it's always a bit of a primal show-off doing the final work with the gas burner at the table.
French Bread - the classic recipe
The white bread is a classic. No doubt about that. Although I have baked "No Knead/The world's best bread" for years, the French bread somehow still leaves the kitchen a lot faster when I bake that :-S So there must be something to it that other loaves simply does not have. I often use this simple and quick recipe that never fails, and does not require anything more than a conventional oven to make. It provides a finished bread in 2 hours.
Homemade ice cream cones
For large homemade ice cones the cones should obviously be homemade. I considered buying a waffle iron for this, but they make too small cones. Then I tried doing them in the oven, but it was hard to control the final result. Now I make them on a pan. They are only slightly more difficult to make than normal pancakes, and they require almost the same equipment.
Homemade Hard Ricotta (Paneer)
Video Recipe - Cheese production seems like something dark and mysterious. But it really is not. Especially the cheeses that does not have to be aged can be easily made at home. The Italian Ricotta and its cousin, the Indian Paneer, are both very easy to make, and incredibly useful for cooking.
Boxed Chorizo
When I cook fried vegetables, make Spanish omelettes, hash from leftovers, etc. I love to add small pieces of chorizo to them. It provides an incredible amount of flavor with small amounts of meat. But chorizo is a very expensive sausage to use in frying. Therefore it is a good candidate for making your own spicy chorizo stuffing, that you can just put into a box in the fridge and use as needed.
Lamb kleftiko - "Braised Leg of Lamb"
Lamb kleftiko (lamb kleptomaniac) Is an ancient Greek dish. It is usually the one we think of as "roast leg of lamb." Rumor has it that it was made by thieving greek bandits by digging a stolen lamb into a hole in the ground filled with red-hot stones. The lamb was then covered up and they could pick up the roasted meat day. The owner of the lamb would not be able to smell it cooking due to the burial, and you the thieves would get away with it.
Raspberry mousse on a sponge cake base - or strawberry mousse
Raspberries, whipped cream, sugar, gelatine and little else. Then you have a great cake that can be used both for dessert and the coffee table. It can also be made with strawberries if you like that better. It is also an incredibly beautiful cake.
Danish pastry made with butter - "A Danish" with cream or jam (spandauer)
Video Recipe - My favorite cake when it comes to danish pastry is the "Spandauer", or as they are known abroad "A Danish". This is how you can make them at home.
Funnel cake - Churros
Video Recipe - I had churros first the time when I was 14, on a holiday in Spain. It must have been good because I have long forgotten my first kiss, which I think was roughly around the same time but I can still remember my first funnel cake with sugar.
