Video Recipe - I have been eating home fries since I was a kid. We had it the traditional "Danish style" with just potatoes, fat for frying, salt and pepper. For the last few years though, I have acquired a taste for the German version "Bratkartoffeln" with onion and bacon.

Cream puffs - Eclairs - Profit Roles of choux pastry
Video Recipe - The dough used for baking cream puffs, eclairs and profit roles is called a "choux" dough in French. The interesting thing about it is that you cook it in a sauce pan, and then mix in the eggs. The dough has the special feature that it largely becomes only crust when you bake it. The same recipe can be used to make the small thick American pancakes you always see eaten on tv and films. You can also use it to make a layer cake with.

Cheese cake - An American cheesecake is made from real cream cheese, and in contrast to the "cheese cake" we usually eat in Denmark it is baked. It's not a cake I bake very often for only the family. It is a dense and heavy cake where a single piece or two generally is enough. So a whole cheesecake never gets eaten here. But it is a fantastic cake. Especially when there are guests to share with.

Stir-Fry and Wok cooking - Introduction
Stir-Fry and wok cooking is still very new in Denmark, but it is becoming more and more popular. This is not really a recipe, but a general introduction to those that are not too familiar with it.
Crème brûlée
Video Recipe - Crème Brûlée is *the* classic French dessert. It is an edible toy for adults. A crispy caramel top. A creamy blubbery filling. It is simple to make. Uses few ingredients, and it's always a bit of a primal show-off doing the final work with the gas burner at the table.
Maximus Houmous (Hummus) - chickpea side dish
You can often buy hummus in supermarkets and specialty stores. Most of those I do not care much about. So I have bribed and begged my middle eastern friends for their recipes. From those I have made a humus that suits my taste. The recipe looks simple, but it took a LOT of experimentation to find the right balance.
Bread Baking Technique #1 - The Baker's Percentage
When making varied and/or large quantities of bread the easiest way to write your recipes are as "bakers percentage". Where ingredients are measured in percents as compared to the total amount of flour. Understanding the bakers percentage also makes you a better baker because they help you understand the structure of different breads recipes instead of just memorising numbers.
French peas with glace - standard and low carb
A simple and very very delicious accompaniments are French peas. If you just add a a bit of stock and reduce it they are even better. Strong in flavor and a perfect accessory, but it is also a dish in his own right.

Video Recipe - Boiled potatoes from the day before are fantastic to use in many dishes. Potato Blinis is one of those recipes that I use them for relatively often. Small thick pancakes that are very similar to the american breakfast pancakes. They are equally useful in the sweet and the savory kitchen.
Bread Baking Technique #10 - The technique behind laminated dough used for pastry, puff pastry, croissant, etc.
Laminated bread is made by making a normal bun dough and then folding it in layers with butter in between. There are different ways to do this. Using croissants and other types of bread as examples I show here what results the different methods will yield. This should enable you to "understand" laminated bread instead of just following a recipe.
Grandmas Klejner (klenät - fattigmann - kleynur - kleinur)
Video Recipe - Classic Danish/Scandinavian cake specially eaten at Christmas. I have certainly not seen it in other parts of the world. And this really IS grandmother's recipe. That is, not my grandmother, but my wife's father's grandmother. But that counts as well.
Homemade Yogurt with heavy cream and skimmed milk powder
It's easy to make your own yogurt, and it can be quite different from the yoghurt you can buy in the store. If you like yogurt, it's even fun to make your own. People who are lactose intolerant can often also better tolerate homemade yogurt. The longer the yogurt "ferment" the more of the lactose is broken down. Making it easier to digest.
